Robuchon, and Alain Chapel. He was awarded his first Michelin star in 1988 at Roc en Val in Tours and another in 1991 at Cheval Blanc in Nîmes. The Chef joined Mandarin Oriental, Paris in 2011 after serving 10 years in Gironde at Châteaux Cordeillan-Bages of the Relais & Châteaux chain, where he held 2 stars in 1999.
In 2006, he was elected Chef of the Year.

Also appointed Director of Food and Beverage, he is responsible for overseeing room service and the hotel bar.
Thierry Marx is involved outside of his Parisian kitchens by creating in 2009 the nomadic cooking school with the town hall of Blanquefort (Gironde), where he welcomes individuals in social difficulty for short training sessions with the project of opening a street food concept. In 2012, he opened a second school in the 20th arrondissement of Paris, “Cuisine Mode d’Emploi(s),” aimed at rapid training for the profession of cook. Then in 2013, he developed this training center by creating the “Boulangerie Mode d’Emploi(s)” session. In recent years, he has also been teaching cooking classes to inmates in detention centers.
Thierry Marx also offers his services to Restos du Coeur, where he conducts cooking workshops and fights against illiteracy. A great lover of Japan, he travels there regularly to recharge and practice martial arts, particularly kendo and judo.
In 2013, he was promoted in the order of the Legion of Honor to the rank of Knight.
